I haven’t always been a fan of the Valentines Day. In the past I’ve had a cynical view of anything that might be considered romantic — Perhaps because I was protecting my heart. These days I prefer a non-cynical approach to life. I notice I’m a little — no a lot — more content when I make the effort to view things not just with rose-colored glasses, but with a positive hat.
Let’s be honest, it’s not always easy to be keep that positive hat on — especially in the anxiety-provoking world we find ourselves in today. That’s why sometimes we need to give ourselves — and those we love — a little extra TLC. Just so happens Valentine’s Day is a good excuse to do just that.
Might I suggest engaging in a little hygge for Valentines Day? It’s kinda the buzz word right now — but if you’re not Scandinavian or you haven’t heard about the hygge — it’s pronounced hoo-guh. Derived from hugga, a Norwegian word which means comfort, hygge is all about simple pleasures, taking time for gratitude, relaxing and getting cozy — all of which tend to bring out feelings of well-being and contentment — making it easier to keep that positive hat on.
So, how do you do the hygge? Ask yourself (and your valentine) a couple of questions. Maybe write them down (get yourself a hygge journal) and take some time to reflect:
1. How can I simplify my life?
A clean organized home is a fantastic by-product of simplifying and I love tips from the book, Spark Joy: “Belongings are acknowledged for their service and thanked before being discarded, if they no longer spark joy.” When you allow yourself to let things go that weight down your physical and mental space — you have more energy. And more joy:).

2. What helps me to relax?
I feel most relaxed when I meditate. And I find it’s protective, like immunity. Even if I meditate for 10 minutes a day, I benefit — and most days that’s all I do. One of my favorite meditations is metta, otherwise known as loving-kindness. I heart Calm, an app for meditation on-the-go.
I also love using essential oils in my diffuser (my current mix: rosemary, peppermint and lavender) and sipping on a mug o’ chocolate or kava tea especially when I’m cuddled up to a soft blanket and my current obsession — a giant sloth.

3. What nourishes me?
I feel nourished when I’m engaging in activities I know are good for my body and mind. My hands down favorite way to move my body is Pilates. Why? It connects my mind and body (amazing way to work with neuroplasticity), keeps me fit, helps with balance and flexibility. I’m a big fan of Six Degrees and Kelly Sams. I also feel divine on a walk out in nature. And although I love to cook — baking is my main jam … and yes, I have a vegan, flour-free, gluten-free, dairy-free cookie recipe to share … keep reading ... the cookies are supes good.

4. What and who am I grateful for?
Don’t forget the peeps who make your world a better place! Togetherness is a key part of hygge … and Valentines Day (although sometimes we all need a little time-out for self-care).

So whether you choose to be with those you love (or need time for self-compassion) … Happy Valentines Day! Spend one day or one afternoon getting your hygge on with the things (and people) that (who) are relaxing, soak up some gratitude and nourish yourself. And if you don’t have a day — carve out what you can — any amount of hygge will restore and heal.

GINGERBREAD BEARS
Warning: they’re semi-healthy, just don’t tell anyone

INGREDIENTS
cookies
1 cup dates, pits removed, and soaked (or a mix of other dried fruits)
1½ cups raw almonds
1 cup shredded coconut (unsweetened)
1 tablespoon coconut oil
1 tablespoon ground cinnamon
2 teaspoons ground ginger (I used one teaspoon as I like them on the mild side)
2 teaspoons ground nutmeg
¼ cup molasses
¼ - ½ cup honey or agave
1 tablespoon vanilla extract
DIRECTIONS
Preheat oven to 325.
Grind almonds in food processor — or opt for almond flour if you prefer.
Add in remaining ingredients and blend.
Place mixture on parchment paper on a pan and another sheet on top and roll.
Place in freezer for 10-20 minutes — this will help to set the dough to cut with ease.
Use a cookie cutter to cut shapes. I chose a bear because I heart bears;).
Place cookies on parchment paper on cookie sheet and bake for 8-12 min (how thick cookies are will change amount of time needed for baking.
Now the best part....
frosting
INGREDIENTS
1 cup cashews soaked for 1 hour
1/4 cup Honey
1 tablespoon Vanilla
1 tablespoon Coconut oil
DIRECTIONS
Drain the cashews and blend ingredients in food processor or blender.
Add additional sweetener to taste. Refrigerate for 30 minutes to hour.
Frosting will firm in fridge.
Frost the cooled cookies.
Take a bite to ensure quality and share!
*Must be refrigerated. Eat within a week.*
