
I’ve been in a rut with breakfast lately. I love my oats and smoothie bowls, but sometimes a girl needs something new to spice up her morning.
I've been loving avocado toast lately, so I put a little spin on the avo-toast for my man on our lazy Sunday before heading to the museum for a much anticipated exhibit: Guillermo del Toro at Home with Monsters.
Here’s what I came up with: sweet potato toast + some hella toppings = tasty, gluten-free, healthy, and of course, simple.
Ingredients:
1 sweet potato + toppings
Toppings:
salmon + avocado + microgreens (omega-3, vitamin E, healthy fats to increase beta carotene)
peanut butter + banana + cinnamon (protein, healthy fats and magnesium)
vanilla yogurt + avocado + strawberries (protein, calcium, E and C)
avocado + hard boiled egg + cayenne (healthy fats, E, protein and vitamin D)
Or
...whatever fits your budget and fancy…or whatever's in the fridge.
Directions:
pre-heat oven to 450
cut sweet potato into 1/4” slices (use cooking spray or lightly coat with olive oil)
bake at 450 for 5 minutes on each side then 2 - 4 minutes each side on broil
while cooking prep toppings
take out of oven, cool if you please and top em’
