strawberry shortcake 4 breakfast

I ❤️ making breakfast. It's perhaps in my top 10. So what's a girl to do when he wants eggs and she wants oatmeal? This girl gets creative💡👩‍🍳 which in my book doesn't equal complicated. As they say in France: moins est plus; less is more.

I'm all about simple with food and style. And most likely you'll find what you need already on-hand. So stay in those cute pj's and eat your dessert for breakfast. Shhhh. No one needs to know it's healthy, too!

TOOLS

  • whisk

  • glass bakeware - square pan is ideal. If you don't have glass use non-stick or coat pan well

  • 2 bowls - I prefer metal

  • spatula

  • 1 large plate

INGREDIENTS

Ingredients

  • 1/2 cup oats

  • 2 egg white + 1 egg

  • 2 tablespoons milk (whatever variety or add in another egg white)

  • 1 teaspoon vanilla

  • 1 teaspoon cinnamon

  • 1/2 teaspoon nutmeg

  • 1 cup strawberries

  • 1/2 cup vanilla Greek yogurt

  • Optional: 1 tablespoon honey, maple syrup, agave or 1/2 teaspoon stevia - for sweet

  • Optional: 1 teaspoon baking soda or powder - to raise

DIRECTIONS

  1. Pre-heat oven to 350 degrees

  2. Spray pan with cooking oil

  3. Slice berries

  4. In one bowl crack the egg whites and beat until frothy then add the whole egg and beat again

  5. measure oats into another bowl and add cinnamon and nutmeg

  6. Fold eggs into dry mixture, then add vanilla, milk and your choice of sweetener

  7. Pour into pan and place in oven

  8. Bake for 10-12 minutes - take out before browns but long enough to firm completely

  9. Place a large plate over the glass and turn upside down

  10. Cut into 4 squares

  11. Use the first as a base and place a dollop of yogurt and a few slices of strawberries

  12. Repeat with all 4 squares
