I grew up next door to my grandparents, and every year for Halloween they'd whip up a big batch of popcorn balls to hand out to trick-or-treaters. I love keeping family traditions alive (and making new ones), so this year I opted to make my own All Hallows Eve treats to share with my fam.
I no longer have much of a sweet tooth (crazy because I used to crave sweets all the time), but if I had to pick a traditional Halloween treat, it would definitely be an Almond Joy. So I made a "healthy-ish" version of the candy bar. The recipe is gluten-free, dairy-free, fairly simple and no-bake which I love. Deets below.

I did my "partying" last weekend (which means I drank an extra kombucha and stayed up past 9 pm) and dressed up as a shark, so I'll be staying in on the 31st and plan to watch more of The Haunting of Hill House (loving this show!) on Netflix.

INGREDIENTS
Layer 1: almond
- 1 cup almonds
- 2 Tbsp. agave
- 1 Tbsp. coconut oil
- 1/2 tsp. vanilla
Layer 2: coconut
- 2 cups unsweetened shredded coconut
- 4 Tbsp. agave
- 2 Tbsp. coconut oil
- 1/2 tsp. vanilla
Layer 3: chocolate
- 1 cup dark chocolate chips (or dairy-free option)
- 1 Tbsp. coconut oil
- Salt to sprinkle over the top
DIRECTIONS
1. Line an 8x8 pan (I used glass) with parchment paper.
2. Add almonds to food processor until ground well.
3. Add in remaining ingredients until well-combined.
4. Pour almond mixture into pan (on top of parchment paper) and place in freezer.
5. Add ingredients for layer 2 to food processor until well combined. Add 1 Tbsp. of the oil, and if needed add the second.
6. Take out pan with almond layer and pour coconut layer over, then place back in the freezer.
7. Add layer 3 ingredients to a medium-sized saucepan on medium-high heat, and stir until melted.
8. Turn heat off, let cool for a few minutes then take pan out of freezer and pour the chocolate over the top.
9. Return to the freezer and when chocolate is solid cut into equal sized bars.
10. Keep in freezer before serving.
