
One of my favorite comfort foods is a good old PB and J, but I’m not a fan of how sweet most jams and jellies are. So I’ll either mash up some berries to top off my toast or make chia jam—which is surprisingly simple and healthy.
Chia seeds were first grown by the Mayans and Aztecs, and are considered to be a superfood with a plethora of health benefits. They’re especially rich in omega-3 (helps to lower cholesterol and inflammation), antioxidants (decreases cell damage) and fiber (keeps you regular and feeling satisfied).
If you want to try a little chia jam for yourself, the recipe is below. And it's not only delicious on peanut butter toast, it's the perfect sweet treat to top off your yogurt or swirl into your oats.

RASPBERRY CHIA JAM
INGREDIENTS
1 6-oz. package raspberries (about 1 1/2 cups)
2-3 Tbsp. chia seeds (use 3 if you prefer a thicker consistency)
1/2 orange, juiced (or 2 Tbsp. lemon or lime juice)
1 Tbsp. honey or 1/4 tsp. stevia
DIRECTIONS
Mash berries in a bowl, then pour them into a small pot set to medium heat on the stove.
Stir in the remaining ingredients and keep on medium heat until the mixture thickens a bit (about 3-5 minutes).
Take off heat and pour into a small Ball jar.
Refrigerate for 2 hours or overnight to cool and let thicken.
Serve on toast, with yogurt or eat it with a spoon right out of the jar.
