3-ingredient sweet potato waffles

This week I’ve been organizing and purging the kitchen, and one thing we never use is our waffle maker. Honestly, I think I’ve used it once—ever. Sad, but true, but I don’t want to get rid of it. Which means I need to use it, right? 

So I decided today would be the day to whip up some waffles for a sammie. I’m not a fan of complicated recipes—or those that use too many ingredients or take too much time—so this is easy peasy. 

Also, this waffle recipe is grain-free, gluten-free, dairy-free and it’s made with 3 ingredients: sweet potato, eggs and Italian spice. (And if you want to add a fourth, I found green onion to be a nice addition.)

If you can eat them, eggs are relatively cheap and super nutritious. One medium-sized egg has around 75 calories and contains 7 grams of protein, plus healthy fats and vitamin D. 

And sweet potatoes are not only freaking delicious, but they’re also rich in fiber and beta-carotene—an antioxidant and precursor of vitamin A. 

Beta-carotene is not only important for healthy skin and eyes, but when consumed in proper quantities, it may also lower the risk for stroke and age-related disease. And when combined with a fat, like the yolk in this recipe, beta carotene is more readily absorbed by the body.

Aside from being nutritious, this waffle is super easy-to-make and hits that perfect savory note on the palate. The recipe is below if you want to give it a try.

SWEET POTATO WAFFLE

INGREDIENTS

  • 1 medium sweet potato (1/2 cup cooked) 

  • 2 eggs 

  • 1 Tbsp. Italian seasoning 

  • 1 stalk green onion, chopped (optional)

  • Salt to taste

DIRECTIONS 

  1. Grease waffle iron with olive oil spray. 

  2. Bake or microwave medium-sized sweet potato (should yield 1/2 cup).

  3. Take the skin off the sweet potato and mash. Then add eggs and spices. Mix until well-combined.

  4. Turn waffle iron on and pour half of the mixture on to the waffle iron and leave to cook until lightly browned. Time will depend on your waffle iron, so watch closely. 

  5. When done, lay waffle on a plate and if making a sandwich cut in half (see image above). 

  6. For sandwich add whatever you’d like. In the image shown I added cheese, arugula, heirloom tomato and broccomole.
