5-ingredient avocado pudding [vegan]

One of my all-time fave desserts is avocado pudding—aka chocomole. And I think you'll love it too, because it's not only healthy, it's freaking delish.
This recipe is high in potassium (from the banana and avocado) which assists in regulating nerve signals, fluid balance and muscle contractions—and supports cardiovascular health.
The fat from the avocado will also help to keep your blood sugar stable (because the unsaturated fat helps to slow the breakdown of carbs). Not to mention, I just love the creamy texture that the avocado lends.
And you just might find that you’ll feel more satisfied (with a smaller portion of this recipe) than you would with a traditional sugar-laden pudding. (It’s sweetened with banana and dates instead of sugar or sugar replacements.)

AVOCADO PUDDING
INGREDIENTS
1 banana
2 Medjool dates
1 avocado
1/4 cup cacao powder
1 tsp. vanilla (optional, but I prefer it with)
DIRECTIONS
Add dates to food processor first, then add remaining ingredients.
Top with the pomegranates, banana or some cacao nibs.
