4-ingredient dairy-free strawberry ice cream

Just got back from Scottsdale, and to be honest — even though there were palm trees, plenty of fresh citrus and sunshine, mountains, and a pool in the backyard — I’m really happy to be home. Even if it feels like there’s 6 feet of snow out there that might never melt, lol. And you know what? That’s a damn good feeling; to be home. I moved once, but I always knew I’d come back to Minneapolis — that’s what they say about Minnesota girls, right? We always move back home — and sometimes we haul a boyfriend back, too. As much as the news likes to promote us as a frozen tundra — where you need to strap on a set of snowshoes to get to work — I think Minneapolis is a hidden treasure. No other place feels more like home to me.

And I've realized that more so lately. Not only is it comfortable (in a good way), but my family is here. I can't imagine leaving my parents now, or my little 2-year-old niece, Mia. Not to mention, my love lives here and we have created a home together. And with all that said, would I like a little more sunshine right now and maybe a few signs of spring? Hell yes. So I’m tricking myself out with my 4-ingredient dairy-free strawberry nicecream. It’s super simple and creamy (that’s my jam for comfort food texture) and all you’ll need are frozen bananas, frozen strawberries, vanilla extract and full-fat coconut milk. Plus, this nicecream is naturally sweetened with fruit, and will only take you about 10 minutes total to prep and make. The recipe is below — in addition to the ingredients above, you’ll also need a food processor with an “s” blade.

4-INGREDIENT STRAWBERRY NICECREAM

INGREDIENTS

  • 3 frozen bananas

  • 1 cup frozen strawberries

  • 1/4 cup full-fat coconut milk

  • 1 tsp. vanilla extract

DIRECTIONS

  1. Slowly add all ingredients together in food processor until creamy.

  2. Scoop into a bowl or cup and top with berries, coconut, dark chocolate, nuts, or whatever your heart desires.
