baked rutabaga fries with avocado basil dip

I tend to get into a rut with food on occasion because if I like something, I could literally eat it all day for weeks. So I try to make an effort to experiment with new foods and recipes — not only switch things up, but also to get more nutritional variety in my diet. We’ve been digging on carrot fries for a while at my home, but I decided to give a good old rutabaga a try for our burger and fries night. Rutabagas are part of the cruciferous family and they’re especially rich in vitamin C, fiber and potassium. And if you watch your carbs, rutabagas are a good swap for potato fries or sweet potato fries. In my opinion, they really have the same texture as potato fries. Not that there’s anything wrong with a potato — they’ve gotten a bad wrap over the years. I’m also a big fan of having a dip for my fries other than ketchup. So I made a avocado basil dip that’s pretty freaking good and simple, too. Because if there are too many ingredients in a recipe, I’m like forget about it. BAKED RUTABAGA FRIES INGREDIENTS


1 medium-sized rutabaga


1 Tbsp. olive oil


Pink Himalayan salt, to taste

DIRECTIONS


Preheat oven to low broil.


Cut rutabaga lengthwise into fries.


Place them in a bowl, add olive oil and salt, and spread them out on a baking sheet.


Place baking sheet in oven for 6-8 minutes, checking often that they don’t get too browned. Then flip the fries and broil for another 3-5 minutes. Please note: I’ve found ovens to all be a little different with heat, so just keep and eye on them.


Serve with avocado basil dup or whatever fits your fancy.

AVOCADO BASIL DIP  INGREDIENTS


1 large avocado (or 2 small)


1/2 cup fresh basil, chopped


1/4-1/2 green onion, chopped (I use 1/2 cup, but you might want to try 1/4 cup to start—up to you)


1 Tbsp. lime juice


Pink Himalayan salt, to taste

DIRECTIONS


Add basil and green onion to food processor with s-blade, then add lime, avocado and salt.


Serve with rutabaga fries, chips, veggies, or plop it on a sammie or eggs. Good on almost everything.t
