
Weekend brunch is kind of a big deal at my house. We sit in the sunroom, eat slowly, look outside, chit chat — and just chill. It’s something we always look forward to.
However, we tend to eat the same thing a lot — hardboiled eggs, avocado, herbs, and toast. That's why I decided to try something new today.
And although we don’t celebrate Easter, I still like to make the day special. So I made a batch of grain-free, dairy-free pancakes, and served them with a fried egg, avocado and herbs. It was a big hit.

4 INGREDIENT PANCAKES
INGREDIENTS
2 medium bananas (save 1/4 of one to use for garnish)
3 eggs
1/2 cup cassava flour
1 tsp. cinnamon
DIRECTIONS
Cut 1/4 of one banana and set aside.
Put the remaining 3/4 banana and one additional banana in food processor with s-blade.
Add eggs, cinnamon, and flour until no longer very lumpy (a few are ok). Best to beat the bananas well first.
Pour mixture into glass bowl. Grease pan and set to medium-high.
Add batter in whatever shape you desire.
Will take about a minute on each side to cook, but as ovens may differ, check at 30 seconds.
Top with leftover banana and maple syrup, or a fried egg — whatever you like.
