Springtime gets me in the mood to make warm weather treats. Nice cream and chocomole are my go-to's, but I’ve been meaning to try a few new summery recipes.

So I decided to go old school and make a batch of chocolate-covered banana pops. Did you ever make these as a kid?

They’re super easy and healthy-ish. I mean you’re basically eating a 1/2 banana with a little dark chocolate—not too shabby for such a rich-tasting treat.

P.S. My dad literally ate 2 1/2 of these bad boys in one sitting — just saying.

 

CHOCOLATE-COVERED BANANA POPS

INGREDIENTS

  • 1 Ball jar

  • 1 package dark chocolate chips (dairy-free if vegan)

  • 1 Tbsp. coconut oil

  • 4 bananas, cut in half

  • 8 popsicle sticks

  • Sprinkles, shredded coconut, cacao nibs, etc. if you want to cover your pops.

DIRECTIONS

  1. Cut 4 bananas in half and add a popsicle stick to the bottom, then set aside.

  2. Pour dark chocolate chips into a Ball jar (no need to use all the chips if they don’t fit).

  3. Add 1 Tablespoon of coconut oil to Ball jar with chocolate and melt in microwave.

  4. Stir the chocolate and coconut to make sure it’s fully melted.

  5. One by one dip the bananas in the melted chocolate. You may need a spoon to drizzle, but the Ball jar makes it pretty easy to coat.

  6. Then, if desired, roll the bananas in coconut or whatever you wish.

  7. Freeze and eat.
