gluten-free bagels and cashew cream cheese

​I love bagels and cream cheese. Who doesn't? And now and then I’ll indulge in the real deal. But currently, I'm not eating gluten or dairy because they both showed up on my recent food sensitivity test.

I totally understand that there's a little controversy around food sensitivity testing, so no worries if you don't agree with me. I only mention it because it's the reason I'm avoiding gluten and dairy at the moment (I don't have a gluten allergy, and I'm not lactose intolerant).

I have, however, experienced pretty amazing benefits from doing a food sensitivity test in the past — my tinnitus stopped, the eczema in my ears went away, and my skin cleared up. But I also want to make sure to say that I'm not in any way suggesting this method to anyone — I'm just sharing my experience.

And when I'm really missing a food that I used to enjoy — but no longer makes my body feel good — I try to create an alternative option. That’s where my gluten-free, yeast-free bagels and cashew cream cheese come in. Call me weird, but I actually really love the creative challenge of creating non-traditional food.

Full disclosure: This was my first stab at making both recipes, but I love how they turned out, so I thought I'd share them. I added chives to the cashew cream cheese and rosemary to the bagels. But if you try the recipes below and come up with another flavor combo, please let me know — I’m always game to try something new. xxoo—christine

 

GLUTEN-FREE ROSEMARY HIMALAYAN SEA SALT BAGELS INGREDIENTS

  • 2 cups cassava flour

  • 1/2 cup arrowroot powder

  • 1/4 cup ground flaxseed

  • 1 tsp. baking powder

  • 4 eggs, beaten

  • 2 Tbsp. apple cider vinegar

  • 2-3 Tbsp. dried rosemary

  • 1/2 tsp. Himalayan sea salt (plus more to sprinkle on top)

DIRECTIONS

  1. Add all dry ingredients to a bowl and set aside.

  2. In another bowl, beat eggs and vinegar and add them to the dry ingredients until well-combined. Mixture will be wet, totally normal.

  3. Scoop and spread mixture into silicone donut molds. You’ll have enough for 6 bagels total.

  4. Sprinkle more salt on top if you’d like, them place in the oven for 20-25 minutes.

  5. Take out midway through and add an egg wash to the top of you want to give your bagels a glazed look. You could opt to add your additional salt at this point instead.

 

DAIRY-FREE CHIVE CASHEW CREAM CHEESE

INGREDIENTS

  • 1 cup cashews

  • 1-2 Tbsp. lemon juice

  • 1/4 cup fresh chives, chopped

  • 1/4-1/2 tsp. pink Himalayan sea salt

DIRECTIONS

  1. Soak cashews in water for 4-8 hours.

  2. Drain water and place cashews in food processor, then add all additional ingredient and blend until smooth.

  3. Refrigerate and spread on bagels, crackers, tortillas, veggies — whatever fits your fancy.
