my go-to meal when I don't feel like eating veggies

When I showed this recipe to Jeff, he said, “that's one of your favorite things to eat.” And he’s right — it's totally my go-to when I'm in a hurry, eating alone, or when I don't feel like eating veggies (but know I need to).

I usually call it a turkey wrap, but it’s more than that — it’s a collard green turkey wrap taco stuffed with hummus, spiced chickpeas, avocado basil dip, mustard, herbs, greens and grape tomatoes.

I love adding these and a little avocado basil dip to my collard green turkey wrap tacos — because let's just be real: avocado and basil make everything better.

And if you're vegan, just take out the turkey, or sub for a plant-based protein slice or cheese if you're vegetarian.

COLLARD GREEN TURKEY WRAP TACO

INGREDIENTS

DIRECTIONS

  1. Follow recipe for hummus, avocado basil dip, and spiced chickpeas — or purchase at store or leave out, up to you.

  2. Take 2 slices of organic turkey slices, slather one side of turkey with hummus and place them each on a collard green, then cut the collard around the turkey slice.

  3. Add the rest of the ingredients and fold over like a soft shell taco.

P.S. This recipe is one serving with about 350-400 calories, 12 grams fat, 13 grams fiber, 34 grams carbs, and 18 grams protein. It's also especially rich in vitamin A and C.
