try it: broccomole

I'm all about sneaking in healthy ingredients while still making food taste and look good. And today I gave guacamole (one of my all-time favorite dips) a little update.
I know there are some peeps out there that feel strongly that altering guac in any way is absolute blasphemy. But hear me out: I added broccoli to my personal guacamole recipe and I actually think it's better. It not only adds more nutrition (broccoli is especially rich in vitamin C, beta-carotene and fiber), but also adds more texture and flavor. Plus, broccoli is low in calories so it also lightens traditional guac up a bit.
I especially like it at breakfast — I top my turkey sausage patties with it, and I'm completely satisfied until noon or later. It's also super good on toast, added to salads, and of course, served traditionally with tortilla chips, or used as a veggie dip. Recipe below. Give it a try and let me know what you think. Or if you have a better rendition, I'd love to hear about it.
INGREDIENTS - 1 medium or large avocado
- 1 cup broccoli
- 2 stalks green onion
- 1 Tbsp. lime juice
- 1 Tbsp. Grlk (or 1/2-1 clove of garlic)
- 1/4 cup fresh basil
- 1/4 tsp. salt
DIRECTIONS
1. Add broccoli to the food processor until well chopped.
2. Add the remaining ingredients.
3. Serve on toast or any way that makes you happy.
Note: If you don't have Grlk, no problem just add 1/2-1 clove of garlic.
