Popcorn 3 Ways

This year I've watched way more TV than I'd probably like to admit. For God's sake, I spent the majority of my 20s and 30s without even owning a TV. And I'd like to say I've read more books than what I've watched this year, but just to be real, it just hasn't been that kind of year.

It's been the kind of year that I’ve needed an easy escape from reality and physical pain. Plus, I also have a “deal” with myself that I can watch a show or movie if I'm on the treadmill — so not all bad, right?

And one thing I’m trying to do less of on the daily is being hard on myself. Let’s agree: it's one thing to encourage oneself to partake in positive and healthy activities, but it’s another thing (and in my opinion worse) to berate oneself for what you think you should be doing. Be gentle, right? Be kind. It’s so true that how we talk to ourselves, how we judge ourselves, ends up being how we treat and judge others.

I digress; this is a blog about food. So let me tell you that I love popcorn with a good movie — but only if it's homemade. It's one of my (many) high maintenance food preferences. So I thought I'd share my recipe for peanut butter and honey popcorn and dairy-free "cheesy" popcorn — along with my top 20 fave shows of the past year. Yep, I’ve been on the treadmill quite a bit, lol.

Let’s start with the recipe then on to the shows . . .

 

POPCORN 2-WAYS

INGREDIENTS

  • 1-2 Tbsp. coconut oil

  • 1/3 cup popcorn

  • 1-2 Tbsp. coconut butter

  • Himalayan sea salt

  • 2 Tbsp. nutritional yeast

  • 2 Tbsp. peanut butter

  • 1 tsp. honey

DIRECTIONS

  1. Add 1-2 tablespoons of coconut oil (depending on how “buttery” you like it) in a medium pot (make sure you have a lid).

  2. Place on burner and turn to medium-high to high

  3. Add a few popcorn kernels to the oil and once one pops, add the rest of the 1/3 cup to the pot. You can shake it a bit, but most of the time I just wait until the popping slows and then I turn the burner off.

  4. Add coconut butter (again the amount depends upon your preference) and mix together. If need be, transfer the popcorn into another bowl and mix with hands.

  5. Add salt then divide popcorn into two equal amounts in separate bowls.

  6. Heat peanut butter and honey so they combine, set aside.

  7. Add nutritional yeast to one part, and the other part add the peanut butter honey mixture.

  8. Eat and watch one of the shows below

 

TOP 20 SHOWS

(Not in any particular order)

  1. Jane the Virgin – I never thought I’d love a show like this, but such great writing and a good escape and feel-good show.

  2. Schitt$ Creek – loooved the characters, quirky and hilarious. I love Daniel Levy and his son.

  3. I’m Sorry – this gal is fun-ny. a little brash, but super funny and real.

  4. The Good Place – cute and feel-good, who doesn’t like this show?

  5. Arrested Development (Season 5) – one of my favorite shows of all time (probably because I’m a nevernude, lol).

  6. This Way Up – a somehow uplifting show that talks about depression in a real way. Brilliant.

  7. You’re the Worst – dark romantic comedy. Do I need to say more?

  8. Gameface – I feel akin to this "never really gets her shit together" gal, and this woman is hilarious. A laugh-out-loud kinda show.

  9. Broad City – I’m not sure how to explain this one. How about I just say inappropriate humor. Loved the season finale.

  10. Russian Doll – so happy season 2 is coming. A story about reliving the same night over. Strangely spiritual.

  11. Alone Together – misfits in LA and their adventures.

  12. A Handmaid’s Tale – love this, but had to be in the right mood; powerful and frighteningly prophetic like 1984.

  13. Ramy – a show where the main character is a Muslim. That felt groundbreaking and Ramy is hilarious.

  14. Shrill – loved the character, body love and Adiy’s wardrobe. Happy to see there will be a season 2.

  15. Younger – almost embarrassing to admit I watched this, but it’s cute and simple and feel-good. A guilty pleasure.

  16. The Morning Show – whew! Great acting by the cast and seemingly honest portrayals of a difficult topic.

  17. The Righteous Gemstones – just so freaking funny. Religious satire at its finest.

  18. Succession – once I looked past how I hated the characters and the greed I embraced the story. Pleasurably painful. High drama.

  19. The Young Pope – Jude Law is exceptional in this show. Get through the first episode and keep watching.

  20. Fleabag – raw and crude and written by a cool ass chic.
